Our Story

We are San Marco's pizza shop, and we live inside a 1938 movie theatre. It is a good story and we are glad you asked.

New School

Electric Dough Pizza Co. is San Marco's pizza shop. The neighborhood hangout, the family table, the lunch that runs long, the date night you did not have to dress up for.

Old school meets new school in the pizza, the place and the vibe. Pick your pizza and get ready for a spark: caramelized cheesy edges, fresh toppings corner to corner. Fill a cup from the organic fountain, or pull up to the full craft bar for a cocktail, a beer or a glass of wine. Finish with gelato. There are twelve flavors and they rotate, so there is always one you have not had yet.

Eighty-Seven Years
To The Day

The building opened on June 5, 1938 as a Sparks Theatre. Art Deco, designed by Roy A. Benjamin, the architect behind the Florida Theatre downtown. Opening night ran A Slight Case of Murder, then Hopalong Rides Again.

It showed movies for eighty-four years. David Blue ran it for twenty-three of them and kept it alive, fixing the projection and the seats without touching what made it beautiful. The pandemic finished what nothing else could. The doors closed in 2022.

The screen came out. The seats came out. The facade stayed exactly where it was.

Electric Dough Pizza Co. started serving on June 11, 2025. Eighty-seven years, almost to the day, after the first show.

We're in the 1938 San Marco Theatre. We uncovered brick nobody had seen since the thirties, left the conduit exposed, and painted it neon orange. Old movies still run on the wall. It's a family table next to a bar that hums.

Meet Tom Gray

Tom Gray has been nominated for a James Beard Award twice. He owns Prati Italia at the Town Center and Town Hall, a few doors down from us here in San Marco Square.

He spent years making the pizza everybody else makes. Then one square, crispy-edged slice in Seattle changed his mind. He came home, bought the cookbooks, and ran close to a hundred tests before he served a single pie to anybody. Roman-style dough, light and airy. A caramelized, Detroit-inspired edge. Cheese baked all the way to the rim of the pan.

He built the menu and the concept with Shaping America's Plate, working alongside founder and CEO Pam Smith, RDN, and culinary innovation partner Cliff Pleau.

Electric Dough Pizza Co. opened in June 2025, in a movie theater that first lit up in 1938.

Order at the counter, take a table number, and sit wherever you like. We run your food out to you and we can ring you up right there at the table. No reservations, so there is nothing to plan a week ahead.

Pull up to the bar instead and our bar team looks after you start to finish.

What was the building before Electric Dough Pizza Co.?
It was a movie theatre. It opened on June 5, 1938 as a Sparks Theatre and later became the San Marco Theatre, and it ran films continuously until December 2022. The screen and the seats came out, the Art Deco facade stayed, and Electric Dough opened in the room in June 2025. There is a longer version of the story here.
Who designed the San Marco Theatre?
Architect Roy A. Benjamin, who also designed Jacksonville's Florida Theatre with R.E. Hall. The fluted tower, the curved marquee and the terrazzo mosaic at the door are all his.

How does ordering work at Electric Dough?
We call it craft casual. Order at the counter, take a table number, and seat yourself. Our team runs the food out and can ring you up at the table. We do not take reservations. Sit at the bar and the bar team takes care of you start to finish.
Where do I park in San Marco Square?
There is street parking around the square, plus community parking at Aspire Church across the street behind the Fire Station. Aspire is busy on Wednesday evenings and Sunday mornings, so the square is the better bet at those times.
